A comparative study on the adipogenic and myogenic capacity of muscle satellite cells, and meat quality characteristics between Hanwoo and Vietnamese yellow steers

Myogenesis and adipogenesis are the important processes determining muscle growth fat accumulation livestock, which ultimately affecting their meat quality. Hanwoo is a popular breed its has been exported to other countries. Providing consumers in beef importing countries with mechanisms related quality necessary promote commercialization of beef. This study aimed compare myogenesis properties satellite cells, between Vietnamese yellow cattle(VYC). Same 28-months old (body weight: 728±45kg) VYC 285±36kg) steers (n=10 per breed) were used. Immediately after slaughter, tissue samples collected from longissimus lumborum(LL) muscles for cells isolation assays. After 24 h post-mortem, LL left carcass sides analysis. Under same vitro culture condition, proliferation rate was higher compared (p<0.05). Fusion index almost 3 times greater (42.17%), (14.93%) The expressions (MYF5, MYOD1, MYOG MRF4)- (PPARγ)-regulating genes, triglyceride content Hanwoo, had intramuscular total monounsaturated fatty acids contents than Whilst, a*(redness) value polyunsaturated Overall, there significant difference characteristics genes expression VYC.
